Korean Barbecue Chicken Fried Rice
A savory, high-protein fried rice loaded with caramelized barbecue chicken, shredded savoy cabbage, softly scrambled eggs, and authentic Korean chili sauce.

Ingredients
- 100ml peanut or avocado oil
- 2 pasture-raised eggs, lightly beaten
- 1 roast chicken, meat shredded
- 1 long red chilli, finely chopped, plus extra to serve
- 1/2 bunch spring onions, thinly sliced, plus extra to serve
- 1/4 savoy cabbage, finely shredded
- 2 garlic cloves, finely chopped
- 1 1/2 cups (300g) long-grain jasmine or brown rice, cooked and chilled
- 1 bunch fresh coriander (cilantro), leaves picked
- 1 tbs toasted black sesame seeds
KOREAN BARBECUE SAUCE
- 1/4 cup (60ml) light soy sauce or tamari
- 1/4 cup (60g) organic brown sugar or raw honey
- 2 garlic cloves, crushed
- 3 tsp Korean chilli paste (gochujang)
- 3 tsp freshly grated ginger
- 1 tbs rice wine vinegar
- 2 tsp toasted sesame oil
Directions
- For the barbecue sauce, whisk all sauce ingredients together in a small bowl with a crack of black pepper. Heat 1 tbs oil in a large wok over high heat. Add the beaten egg and cook, stirring, for 1 minute until softly scrambled. Remove and set aside.
- Add another 2 tbs oil to the wok with the shredded chicken and half the barbecue sauce. Stir-fry for 5-6 minutes until deeply caramelized and fragrant. Remove and set aside.
- Add remaining 2 tbs oil to the wok with chilli, spring onions, cabbage and garlic. Stir-fry for 1 minute until vibrant and fragrant. Add the chilled rice and remaining barbecue sauce, tossing continuously for 2 minutes.
- Increase heat to high and let cook undisturbed for 4-5 minutes until the rice begins to crisp around the edges. Remove from heat and gently fold in the reserved chicken, scrambled eggs, and half the fresh coriander.
- Divide into warm bowls and top with toasted sesame seeds, extra chilli, sliced spring onions, and coriander sprigs.
